Today at 30 Day Vegan I am sharing my first ever cooking demonstration video - cooking beans in a pressure cooker. Welcome, if you are visiting from Heather's course.

As I've said at 30 Day Vegan today and also in Tools for a Whole Foods (Plant Based) Kitchen my Kuhn Rikon Duromatic pressure cooker is one of my favorite and most often used kitchen tools. It seriously helps me cook healthy meals more efficiently and faster. It saves me time in the kitchen, and that's something I truly value. 

I’ve owned my pressure cooker for at least six years and have successfully cooked beans, soups, and stews. But after reviewing Jill’s e-cookbook I realize I’ve only scratched the surface of what my pressure cooker can do.

In the last couple weeks I’ve perfected (third times a charm) cooking brown rice, start to finish in under 30 minutes. Something I had never tried before.

I’ve learned that I've been using more water than I need to when I cook beans and veggies in my pressure cooker, a habit carried over from my pre-pressure cooking days. And that if I simply layer my veggies correctly in the pot I can use less water and get a better texture. Just say no to mushy veggies.

"The New Fast Food" has a bunch of recipes I want to try and I've had good success with an adjusted version (I never follow recipes exactly, I’m cursed that way) of Potato Cauliflower Curry. I tripled the recipe to feed our crew, though I probably only needed to double it. Including the time required to chop the veggies the whole process did take longer than 30 minutes but the actual cooking part was under half an hour.

I love how seasonal Jill’s recipes are. Perfect if you are eating from the garden, farm or farmer’s market.

But there’s more than “just” recipes in this book, although I think the cookbook is worth its price for the recipes alone.

I personally enjoyed Jill’s pressure cooking story. I love story. I also liked the short review of pressure cooker history, which is more interesting than it sounds.

Jill covers all the bases of owning a pressure cooker from how to choose one to how to clean it when you burn something to the bottom. And you probably will burn something, at least once. I have, more than once. But Jill even walks you through how to save that pot of food from tasting burnt. Is she a miracle worker or what?

Jill is also very twitter available. I tweeted some ambivalence with my first rice cooking experience and she came to the rescue with advice (I could have found in the book if I just looked closer) and encouragement. She’s like a personal pressure cooker instructor.

I've been pressure cooking for years, but as you can see, in the month I’ve had this e-cookbook I’ve learned a lot. I guess you can teach an old vegan dog new tricks.

I really like Jill’s book. It’s given me some new inspiration in the kitchen. It’s helped me better understand and use my pressure cooker and there’s a bunch of recipes to try.

The recipes look good (I've only tested one). Jill is an excellent instructor and help. And the e-cookbook is a wealth of information about pressure cooking. 

If you own a pressure cooker or are considering buying one you’ll want to get this e-cookbook. With regards to buying a pressure cooker, I don’t regret that purchase for one minute. We’ve more than paid for it with all the money we’ve saved in cooking beans from scratch.

My mom always used a pressure

My mom always used a pressure cooker so I tend to see it in only in terms of tough meat cuts and stews. I'm curious how it could be used to help me now. I'll have to do some reading. You asked for favorite vegetables? Well...my new love is leeks. I had no idea they were so easy. The kids tend to dislike onions and I find that if I add leeks to stir-fries it gives onion flavor without being overwhelming. Chinese cabbage is another good one. You can toss it in anything and it holds its shape and seems to compliment everything. Of course my old faves are still good. There's nothing as good as lightly steamed broccoli or green beans eaten with your fingers as soon as they're cool enough to handle!

So happy that you mentioned broccoli and green beans. They each take only 1 minute at pressure in the pressure cooker. Potato leek soup is one of my favorites and that is under pressure for only 3 minutes. I hope that you have some great pressure cooking experiences.

Wow, it sounds like a

Wow, it sounds like a wonderful book..even if I don't win I need to pick it up.
There are so many wonderful veggies, but my favorite are:
tomatoes..though really a fruit, but hey they are just great
Swiss chard
Kale
spinach
brocolli
peas...love fresh peas
string beans..and the list could go on and on..
my least favorite, but hoping to change that is cabbage

I am loving my KR Duromatic

I am loving my KR Duromatic pressure cooker, too (thanks to Renee). I might even consider purchasing a smaller one for when I want to make two dishes at once. Nothing I have made didn't turn out well, but there's *plenty* of room for me to tweak and learn. I think Jill is great. She is also very accessible on Facebook. I would love to win her ecookbook. I have been using the Lorna Sass veg cookbook and love her, too. All of the recipes I have tried in her book are bursting with flavor!

I love all veggies, but some favorites are broccoli and kale. Thanks for this opportunity!

I eat a lot of veggies, but my favorite is simply carrots. I'd love to say something more...exotic like kohlrabi, but it's carrots.

i love veggies so much, don't think i can choose a favorite... this books sound great. i am actually looking to get a pressure cooker these days so i'm sure this can be a lot of help for me.

My father *insisted* that I

My father *insisted* that I have a pressure cooker. I politely turned him down numerous times, and then he just bought me one anyway. It sat untouched for quite some time. I found it completely intimidating. I finally worked up the nerve to try it twice. It was okay, but obviously need guidance! (I was super-psyched when I heard you were going to be demonstrating on 30 Day Vegan!!!) So, I would LOVE to win this e-book. My fave veggie is the sweet potato. There is just no wrong way to fix a sweet potato!

I also have a KR Duromatic

I also have a KR Duromatic and love it. I refer a lot to "Great Vegetarian Cooking Under Pressure," which includes tons of basic info, charts for grains, veggies and beans, and awesome recipes, many vegan or easy to adapt.

My favorite veggie? I am a brussel sprout and asparagus girl, but I rarely meet a veggie I don't like. Thanks for offering. I would absolutely love to add this book to my tool box.

We live in Colombia where

We live in Colombia where every family, no matter how simple, has a pressure cooker. At first I balked at getting one, because I'd never used one before. But after cooking a pot of soaked beans for five hours and still not finding them soft enough, I finally saw the light. (We live at altitude as well, which makes cooking times even longer.) We're still just learning how to use it, but it has already transformed the way we cook brown rice, beets, and legumes. I still feel like a newbie, however, and would love to know more!

Favorite vegetable? Fresh peas, straight from the pod, are hard to beat.

I LOVED your video and all of the tips. I've been reading more about pressure cookers lately, but you have converted me. I'm going to get one!

I love fresh garden tomatoes, but they have ruined me for the grocery store tomatoes. I also love carrots, zucchini and squash. I got some great "rainbow" carrot seeds from an etsy shop, and my kids love digging them up to see which color they get.

I've been thinking about

I've been thinking about getting a pressure cooker. We eat a lot of beans, and it would be nice if they took less than a day to cook :-) My favorite veg...hmmm...i don't think there is any vegetable that I don't like. But, top of my list are the dark leafy greens, kale, swiss chard, spinach (for the brief season it is here), tomatoes (although I guess a fruit) are probably the other veg i eat the most, and love all different ways. Actually, I don't think there is a vegetable that I don't like. :-)

I have NEVER used a pressure

I have NEVER used a pressure cooker but just perusing this blog makes me curious & interested.....of course that's no surprise w/all things foodie & healthy in nature :)
& favorite summer veggies? Well I was elated the other day to find a yellow squash - the equivalent of zucchini - in the grocery store the other day when I was looking for vegetables for a thai salad. (my own version) So I'd say, possibly cause I find it more rare to locate that I love yellow squash. But who can forget homegrown tomatoes too?? The flavours just don't compare at all to store-bought ones.
So that's my thoughts for now :)

I've never used a pressure cooker. I sure would like to try though. Your video at 30 Day Vegan was well done and intriguing. I'm interested in learning more about using this piece of equipment. I might even invest in one for our family! Thanks Renee.

I remember my sister-in-law

I remember my sister-in-law always cooking with a slow cooker when she had kids to feed but I admit to being a little bit afraid of them! I have not been very good at planning our meals ahead of time, though, so I have been thinking a pressure cooker might help with the time issue (especially with beans). It's hard to pick a favourite veggie. Probably broccoli (aka Superfood around our house), but I love corn (especially at this time of year!), zucchini, squash, peas, etc. etc.!

Third, thanks for this post. I have a pressure cooker that was given to me as a gift and I have always wanted to cook beans and rice in it but I wasn't sure how to do it exactly. I've only ever used a pressure cooker for sterilizing media used to grow bacteria! Hahah.

I'm not a pressure cooker cook, but I'd like to start. You've convinced me. :D

In summertime, it is almost

In summertime, it is almost unfair to ask, but since my kids only eat green beans or broccoli, they are no longer my favs. I will have to say, corn! Thanks for the chance to win.

Pressure cooker cook book!

Pressure cooker cook book! Sounds great and so helpful. I love mine, and have really been using it more and more. It makes it so simple and fast to cook beans and legumes.
Favorite veggies? hmmm.....right now I'm doing a lot of green smoothies so Kale is a good one, along with spinach. I'm hoping to grow a "greens garden" this fall and those both will be featured. :)

I love this. I think my favorite vegetables have to be beans ( dried, shelling, and snap, don't forget Romano). I love so many veggies, that it is excrutiating to just choose one or two. I guess for lucky number two I will say raw carrots, since I snack on them all day at work.

We have 4 pressure cookers, 3 stove top and one electric. And they get used a lot.
Most liked vegetable would be the tomato for all it's components (juice, dried, canned, paste, whole, sliced, etc.) and it's many varieties and flavor variations.

I have a pressure cooker that I bought several years ago but I have always been afraid to use it, your video and info on Heather's 30 Day Vegan Workshop have given me the gumption to get it out again and use it this weekend! Thanks so much and I am really enjoying the workshop with you two!

My favorite vegetables are kale, spinach and mushrooms. I love adding these to many different dishes, including stir fries, and pilafs made with quinoa or rice. I use my pressure cooker often to prepare them as well, and would love a copy of this cookbook....thanks!

I have always used a pressure

I have always used a pressure cooker, but have pretty much limited it to cooking dried beans. I would love to expand on its use. Not having to spend hours in the kitchen, or heat it up for hours would be a blessing for sure. One of my favorite things to cook is blackeye peas. I recently tried them with kale and they were great. Summer veggies are the BEST--where do I begin...vine ripened tomatoes, eggplants, bell peppers, okra, everything at the farmer's market!....oh, almost forgot corn on the cob! I'd love the book!

My family is mostly

My family is mostly vegetarian and have been for years. I would love to try out a pressure cooker and diversify my meals, as my kids are complaining. Also, I'm a busy teacher and I sometimes don't finish school until 5:30pm and from what I read, pressure cooking can really speed up food prep. We eat all kinds of veggies - red peppers, zucchini, eggplant, mushrooms, broccoli, asparagus, cauliflower. I also make spaghetti squash in the summer and acorn squash in the winter. Also regular and sweet potatoes. I guess anything goes.

I don't have a pressure cooker but I like the idea of quick soups so perhaps this book will make me buy one.

My favourite vegetable is asparagus for the short time it is in season, also broccoli, cauliflower and leeks.

I'm a "newbie" too, at

I'm a "newbie" too, at pressure cooking. And I'm loving it! I often cook for 15 people for a straight ten days so I bought a large cooker. I would love a vegan cookbook! I actually fed a team from Denver an almost vegan meal last night... TVP and Tofu Ma Po Lettuce wraps... Not that you need a pressure cooker for that!

As far as veggies go... we can get everything here in Costa Rica at such a low price! Camotes, pejiballes, yucca, and all of the regular veggies. We can't get good corn on the cob, kale, collards or turnip, however, and when I go to Maine, I always fill up on those!

Kohlrabi! It is my newly discovered favorite, of course neck in neck with fresh from the vine tomatoes and zucchini!

oh man, I love so many!

oh man, I love so many! Onions, yams, carrots, turnips, celery, all kinds of greens, legumes, broccoli, leeks, fennel, asparagus, artichokes, peas, zucchini, winter squash... I could go on and on!

I love pressure cooking, and

I love pressure cooking, and use my pressure cooker everyday. I love all vegetables - two are too few to name! Okra, spinach, cabbage, cauliflower, eggplant, etc. are a few that I cook with every week. I make lentil stew, black bean soup, various curries, rice dishes, and other grain pilafs in my pressure cooker. Your book sounds very interesting....would love to have it :-)

As for favorite vegetable -- that's a difficult choice. It would probably be easier to mention those I don't care for, though there really aren't any though I like some better than others. I was the kid growing up, who when offered dessert after supper often said "no thanks" and just had another serving of vegetables. I know, I know, what a strange child I was :-).

I guess I'd have to say that my favorite veggie is artichoke hearts.

Ever since you posted about your pressure cooker in your favorite kitchen items post, I've been thinking about getting one, just afraid I don't know what to do with it. Cooking beans would be lovely, and as you said so much cheaper. My favorite vegetable, hard question: fresh tomatoes, beans, asparagus, corn, beets.....ahhh, I love them all!

I don't have a pressure cooker but want to get one. Then I get intimidated since I don't know how to use it and put the idea off for a while. A book like this sounds like the right tool to get started! Favorite veggies: Fresh green beans, peas, spinach and roasted brussels sprouts!

I know I will never reach the potential for using beans in our diet (and budget) until I have a pressure cooker... but I have been so afraid to try one! Perhaps this ebook could be my tutor and I could finally take the plunge! Fav summer veggies: yellow beans... with butter. :) So I don't grow that many of them!

I love using our two pressure

I love using our two pressure cookers. They are the ultimate in cooked 'fast food'.

Right now, my favorite vegetable is globe artichoke cooked in the pressure cooker, of course.:)
