Red Melon Slushies & Strawberry Ice Cream

I realize that fresh strawberry season is over for most of us. But if you have strawberries in the freezer these are two fantastic summer recipes.

The slushie recipe I've posted before, years ago. It's so good I want to post it again and I also wanted to create a nice pdf that you can print.

Red Melon Slushie

Ingredients:

  • 4 cups watermelon chunks
  • 2 cups strawberries
  • 1 lemon, juiced

Directions:

Blend all ingredients till smooth in blender.

Notes:

For best results either the strawberries or watermelon should be frozen. The other ingredient should be fresh, or thawed. You need the liquid from the fresh or thawed ingredient so that it will blend. And you need the frozen fruit to make it a cold slush.

I usually prepare the recipe, as is. But a fabulous addition is fresh cherries. It makes the slush very red as you see in the photo below. Oh it's so yummy I want to go whip one up right now!

Strawberry Coconut Ice Cream

The ice cream recipe is one of my favorite "company's coming" desserts. Normally we don't have dessert, except fresh fruit with our supper. But I sometimes like to make something special when we have guests. This has been my go-to recipe for awhile now.

This ice cream is dairy free, soy free, nut free, and sugar free. And I'm asked for the recipe, by herbivores and omniores alike, nearly every time I make. It's very good.

I use dates as a sweetener which requires a high powered blender. If you want a date-free recipe check out this version from The Whole Life Nutrition Kitchen. I adapted their recipe to create my own.

Speaking of The Whole Life Nutrition Kitchen - they have some great recipes over there. My mom owns their first cookbook, and really likes it. It's a good resource for whole foods based cooking with an emphasis on high nutrient plant foods. The cookbook is not vegan but there are a lot of plant-only recipes in it. Reminds me a lot of Heather's Whole Food Kitchen workshop.

I apologize I have no photos of this recipe. Prepared food photography is not my gig. I love photographing raw, fresh vegetables and fruits but by the time the meal is cooked I'm just not interested in taking photos of it.

Recipe

Ingredients:

  • 2 cans full fat coconut milk
  • 1 pound strawberries, fresh or frozen, thawed
  • 1 cup dates
  • 1 tbsp vanilla extract
  • 2 tsps lemon flavoring, or almond extract (I really like almond)

Directions:

  1. Mix one can of coconut milk and the dates in the Vita-Mix, or similar high-powered blender. Blend till completely smooth.
  2. Add second can of coconut milk, strawberries and extracts. Blend till well mixed. You can blend further till completely puréed or you can stop blending while there are still small strawberry chunks for texture.
  3. Prepare in ice cream maker, according to directions.

Notes:

This prepares a large amount of ice cream. My 1 Quart Donvier ice cream maker can barely manage a recipe this size. I make this amount when we're having guests for supper.
